Warm Pork Fillet Salad with Honey Dressing

Ingredients

2 small Bundawarrah pork fillets (approx. 200g each)
1 tbs olive oil
Freshly cracked black pepper

Dressing

60ml (1/4 cup) olive oil
1 tbs red wine vinegar
3 tsp honey
Salt and cracked pepper
Asian salad leaf greens

Serves 4

Preparation Time 10 mins

Cooking Time 8-10 mins

  • Rub the oil over the pork and season with pepper and salt.
    Cook under a preheated grill or BBQ on medium-high for 7?9 minutes.
  • Rest the Pork for a few minutes before slicing.
  • Combine dressing ingredients in a covered container and shake well season to taste.
  • Serve the cooked pork on a bed of Asian salad leaves and drizzle with dressing.
